It is possible to run AirServer Windows 10 Desktop Edition (UWP) to completely fill the screen and hide the task bar.

You can do so by pressing the hamburger menu in the app and scrolling down to the Window Behavior tab. In this tab, you can select Fullscreen under the Window Mode section, which will also put the app into full-screen mode right away.
